How to Prepare Fetri Toto
1. Cook the Okra
Put the chopped okra and one whole tomato into a cooking pot. Add a small amount of water and a pinch of salt. Cover and allow the okra to simmer until it becomes soft and tender.
2. Prepare the Pepper Mixture
Using an asanka, the traditional Ghanaian grinding bowl, grind the habanero peppers or kpakpo shito together with the onion and a little salt.
Add the boiled tomato and continue grinding or mashing until you achieve a coarse pepper mixture.
3. Add the Cooked Okra
Add the hot cooked okra to the pepper mixture. Gently mash and stir the ingredients together, making sure to leave some pieces of okra intact. This helps maintain the traditional texture of the dish.
4. Prepare the Palm Oil and Fish Sauce
Heat the unrefined palm oil in a separate pan. Add chopped onions and fermented fish such as momoni, then fry gently until fragrant.
Add smoked mackerel, fried fish or boiled wele, depending on your preference. Allow the mixture to cook briefly so the flavours combine properly.
5. Combine the Ingredients
Pour the hot palm oil and fish mixture over the mashed okra. Gently stir everything together until the palm oil, fish and okra are evenly combined.
